Peanut Salad Recipe
Great-Grandmother Senkbeil's Peanut Salad This is a recipe that my Great-Grandmother invented. Her family lived in the South, they were poor and she was always looking for things to feed her large family that didn't cost too much. Measurements are approximate since this recipe is from memory. This is a family tradition for Thanksgiving and Christmas. 2 to 3 large red apples 2 to 3 ripe bananas 2 to 3 tbsp. Mayonnaise 1 cup peanuts (roasted, unsalted) 1/4 to 1/2 tsp. yellow mustard Shell the peanuts and crush them with a rolling pin until you have 1 cup (8oz). Dice the apples. Peel and slice the bananas. Mix all the ingredients. Serve promptly.
